1 cup any flavor Whey protein powder
3 tsp baking powder
Mix dry ingredients together in mixing bowl.
1 full egg
3/4 c. skim milk
2 T vegetable oil
2 T olive oil
Beat together in a bowl. Make well in center of dry ingredients. Add liquid ingredients to dry ingredients and stir until well blended.
Divide the dough in half (about 3/4 c. dough to each half).
To one half, add 3/4 tsp cinnamon and a heaping 1/4 tsp nutmeg.
To the other half, add 1 tsp nutmeg and 1/2 tsp ground ginger.
Mix spices into each half until well blended.
Oil mini muffin cups, using fat free cooking spray (PAM). Fill muffin cups with dough to about 2/3 full.
Bake: 425 degrees for 6 minutes.
