Pork Fajitas with Avocado-Apple Salsa

Servings: 8 fajitas

  • 1 tsp. cayenne pepper
  • 2 cups water
  • 2 Tbsp fresh lime juice
  • ¼ tsp salt
  • 2 tsp garlic, minced
  • 1 (1-pound) pork loin chops
  • Avocado-Apple Salsa
  • Pan Spray
  • 8 (7 inch) tortillas, Low-Carb, high fiber, whole wheat (such as La Tortilla Factory)

Combine cayenne pepper and water in a small saucepan, and bring to a boil; remove from heat. Add lime juice, salt, and minced garlic, stir. Reserve 2 Tbsp of liquid. Set aside.

Trim fat from pork; pierce pork loin with fork; place pork in a shallow dish. Pour cayenne mixture over pork; cover and chill 1 ½ hours. Refrigerate.

Prepare Avocado-Apple Salsa, and set aside.

Drain pork, reserving marinade. Place pork on a rack coated with cooking spray; place rack in a shallow roasting pan. Brush reserved marinade over pork. Bake at 375 degrees for 30 minutes or until meat thermometer reads 160 degrees in the thickest part of the meat. When fully baked, set aside and keep warm.

Wrap tortillas tightly in foil, and bake at 350 degrees for 10 minutes. Or place tortillas in microwave for 30 seconds on High, or until warm.

Cut pork diagonally across grain into thin slices. Arrange pork slices and Avocado-Apple Salsa in center of each tortilla. Fold bottom half of tortilla over filling, and fold sides over filling (wrap like a burrito).

Avocado-Apple Salsa:

Yield: 2 cups (1/4 cup each)

  • 1 medium ripe avocado, peeled and diced
  • 1 large Granny Smith apple, diced
  • ½ red bell pepper, diced
  • ¼ cup purple onion, diced
  • 1 Tbsp fresh cilantro, chopped (add more if you like the flavor)
  • ½ jalapeno pepper, seeded and minced
  • ½ large lime, juiced
  • 1/8 tsp salt
  • 1 tsp garlic, minced

Combine all ingredients in a bowl, and toss well. Salsa is also tasty on chicken and beef.
