Beef Lettuce Wraps

Once again, our culinary wizard, Jennifer Ozick, does not disappoint (see more about Jen in our “About Us” page).

Servings: 4

Ingredients:

1 pound of lean ground beef

¼ cup Lite soy sauce

2 Tbsp. garlic, minced

3 green onions, diced

1 Tbsp. red pepper flakes

2 Tbsp peanut butter, crunchy

1 Tbsp. fresh ginger, grated

8 oz. bean sprouts

¼ tsp. Stevia sweetener

1 head large leaf lettuce, pliable types, such as; iceberg, red lettuce, radicchio

Preparation:

In a large skillet, over medium-high heat, brown meat. Add next 8 ingredients. Mix well. Continue to cook until bean sprouts are well glossed. Remove from heat.

Dry lettuce leaves well.

To Serve:

Spoon stir-fry mixture into the lettuce leaf. Wrap the lettuce leaf to enclose the filling. If you would like to kick-up the heat, add a drizzle of your favorite Asian hot sauce, such as; Huy Fong, Sriracha Hot Chili Sauce. Yum!
