Beer Brined Pork Chops

Servings: 8-10

Ingredients:

2 ½ cups water

1 (12 oz) beer, I used Boulevard Wheat

1 (4 oz) can green chilies, diced

¼ cup light brown sugar OR ¼ cup Splenda brown sugar

2 Tbsp kosher salt

6 quarter-sized slices of fresh ginger

6 cloves garlic, minced

2.5 pounds (about 8-10 chops, family pack) pork loin, boneless, center-cut chops

Brine Preparation:

Combine water, beer, chilies, brown sugar, salt, ginger and garlic in a large bowl. Stir until sugar and salt have dissolved. Pierce pork chops and add them to beer brine; cover. Refrigerate 4-24 hours. Turn chops occasionally until ready to grill.

Ready to Grill!

Heat BBQ grill to a medium-high temperature. Remove pork chops from brine. Discard brine.

Grill pork chops for 12-15 minutes or until pork is no longer pink. Turning meat 2-3 times while grilling.

Nutrition Facts (with beer brine): Calories: 352; Fat: 16.5g; Carbohydrates: 14.5g; Protein: 32.5g. You will not consume most of the beer brine. It will be cooked off during grilling.
