Chicken Caesar Wraps or Sandwiches

This recipe is super yummy and easy to make. My family likes to dip the wrap/sandwich into a lite ranch salad dressing. Oh…The dressing idea is not figured into the nutrition facts, so keep that in mind. J

Ingredients:

4 ½ Tbsp flour

¾ tsp ground black pepper

6 chicken breasts, boneless, skinless

3 fresh lemons, squeezed

1 Tbsp garlic, minced

6 tsp Worcestershire sauce

Dash of Tabasco sauce

6 tsp Parmesan cheese, grated

3 Tbsp walnuts, chopped and toasted

6 Romaine lettuce leaves

*6 (7 inch) tortillas, Low-Carb, high fiber, whole wheat (such as La Tortilla Factory)

OR 6 whole wheat hamburger buns

Several methods for toasting walnuts:

• Bake walnuts on a cookie sheet, in a single layer, at 350°F for 8 to 10 minutes, checking frequently.
• Microwave walnuts in a single layer on a microwave-safe plate on medium-high for 5 to 6 minutes, stirring every 2 minutes.
• Cook walnuts in a skillet at medium-high heat for 3 to 5 minutes, stirring frequently.
Regardless of method, walnuts can be toasted dry, without oil.

Chicken Preparation:

Combine flour and pepper. Coat chicken with flour mixture, shake off excess. Spray a large skillet with cooking spray. Over medium heat, lightly brown chicken on both sides. Combine lemon juice, garlic, Worcestershire sauce and hot sauce; pour over chicken. Cover, simmer for 15 minutes or until chicken is done. Place chicken on a cutting and slice. Arrange lettuce on the tortilla; top with chicken. Sprinkle the Parmesan cheese and toasted walnuts. Roll up and serve while they are still hot! Yum!

*Note: You can also serve the chicken breast on a whole wheat bun, if desired. If so, place whole chicken breast (without cutting) on **bun before adding Parmesan cheese and walnuts over the top.
