Naked Rootbeer Pulled Pork – Seems appropriate since Dr. Willey is the author of What Would Your Doctor Look Like Naked?
This awesome recipe is courtesy of Jen Ozick. Read more about her here.
The reason I call it “naked” is because it’s not served on a bun. You can put it on top of a salad and go low-carb!
Serves: 8
Ingredients:
1 (2 pound) pork tenderloin
1 can of root beer
1 (18 oz) bottle of BBQ sauce, I used Gate’s Original Flavor
Preparation:
Place the pork tenderloin in a slow cooker and pour a can of root beer and a bottle of BBQ sauce over the meat. Cover and cook on low heat for 6 hours or until pork shreds easily with a fork.
After pork has cooked *shred the pork and place it back in the slow cooker. Serve immediately or keep warm in slow cooker until ready to serve.
*I like to shred the pork using a KitchenAid mixer with a strong flat beater attachment. Works like a charm!
